1 lb mixed exotic mushrooms (e.g. pink oyster, yellow oyster, lion’s mane, snowflake, and etc.)
2 tablespoons vegetable oil
1 small onion, sliced
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 teaspoon cornstarch
1/4 teaspoon red pepper flakes
Salt and pepper to taste
Chopped green onions and sesame seeds (optional)
Clean and slice the exotic mushrooms.
In a large skillet or wok, heat the oil over high heat.
Add the sliced onions and minced garlic and stir fry until fragrant, about 2 minutes.
Add the sliced mushrooms and stir fry for another 2-3 minutes until they are tender and starting to brown.
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, cornstarch, and red pepper flakes.
Pour the sauce over the mushrooms and stir until the sauce thickens and coats the mushrooms, about 2 minutes.
Season with salt and pepper to taste.
Serve hot, topped with chopped green onions and sesame seeds if desired. Enjoy!
